Lamb Quesadilla
2 LBS Lamb stew meat
2 Cups crushed papaya and juice
2 Cups of water
2 whole shallots course diced
Salt and Pepper to taste
We use a multi grain tortilla but you can use any type you like
½ pound smoked Gouda cheese grated
1 cup sour cream
2 scallions minced
½ cup olive oil
Place lamb meat, papaya, shallots and water in heavy sauce pot and bring to a boil.
Turn down to a simmer and cook until lamb meat is shredding up and very very tender and the liquid is gone. Place tortilla on work surface and cover one half with smoked Gouda cheese and then top that with shredded lamb meat and then more smoked Gouda.
Fold tortilla over and set aside. Put a Tbsp of oil in a sauté pan that fits the quesadilla and put on med heat. When it has heated up, place the quesadilla in the hot oil and brown on both sides until cheese is melted. Cut into wedges and serve with a little cup of sour cream garnished with minced scallions
