Herb Crusted Petite Filet with mango, roasted corn salsa

SALSA
Ingredients:
- 3 ears of corn on the cob grilled and cut off the cob
- 2 ripe mangos 1 cut into a small dice, 1 in a blender
- 1 jalapeño minced
- 3 Tbsp diced red pepper salt & pepper to taste
- 4 Tbsp of chopped fresh cilantro
- 3 Tbsp of olive oil
Directions: Place corn, mango puree, diced mango, both peppers, cilantro and olive oil in mixing bowl and mix well. Set aside.
FILET
Ingredients:
- 3 lbs cleaned filet mignon cut into 6 equal portions
- 3 Tbsp of chopped fresh rosemary, thyme and basil mixed
- 2 Tbsp olive oil for cooking
- Salt and pepper for seasoning
Directions:Season filets with salt and pepper.
Dredge in fresh herb mixture.
Heat sauté pan with olive oil and when hot place filets gently in the oil so you don’t splash the oil and get hurt. Cook to the temperature desired.
Season to your taste and spoon on half of the cooked filet.
