Créme Anglaise

Ingredients:

  • 6 egg yolks
  • 1 vanilla bean or 2 Tbsp vanilla extract
  • 1 cup sugar
  • 2 cups heavy cream

Directions: Place all ingredients in metal bowl and mix thoroughly. Then place over water in a double boiler on low heat. Whisk every 10 or 15 seconds til mixture starts to thicken.

Once thickened to the consistency of honey or a little bit more chill until cool.

For dark colors to decorate use a little chocolate syrup and or a little raspberry puree together.

Make either lines or dots and draw a tooth pick through them.

For the lines go back and forth so the drag marks you make go one way and then the other. For dots you can make hearts by drawing through.

You can even make a spider web by making concentric circles and drawing the toothpick from the center out and the alternately outside to the center.
