Butternut Squash & Apple Soup
Servings: 6
Ingredients for Soup:
- 1 large butternut squash peeled, de-seeded and cubed
- 4 granny smith apple cored and cubed (skin on)
- 3 cups heavy cream
- 3 cups water
- 1 Tbsp cinnamon
- 2 tsp nutmeg
- 1 tsp ginger
- Salt and pepper to taste
Ingredients for Crème fraiche:
- 1 cup crème fraiche
- 1 tsp cinnamon
- Chopped scallions if you like
Directions: Place cubed squash and apples in heavy sauce pot with water and cream bring to a rolling boil and reduce heat to a simmer. Cook until squash and apples are tender. Strain off liquid and reserve. Blend squash and apples until smooth. Reintroduce the liquid, seasoning with salt and pepper to your liking.
Fill soup bowls and place a small dollop of crème fraiche and chopped scallions
