Warm Romaine Hearts
Servings: 4
Ingredients:
- 2 romaine hearts
- 2 cups grape tomatoes, sliced in half
- ¼ cup of pistachio oil and 1/8 cup key lime juice mixed
- 3 tbsp olive oil
- salt and pepper to taste
Directions: Cut romaine hearts 1 inch wide. Best if you use the white part of the lettuce for more crunch.
In a large sauté pan heat olive oil until it just starts to smoke. Throw in cut romaine and rapidly toss for 20 seconds during which time add salt and pepper. Add grape tomatoes and toss for another 10 seconds. Add pistachio and key lime mixture and toss for another 10 seconds.
Split onto 4 plates and serve immediately.
